Seven species of celeriac (‘Jabłkowy’, ‘Odrzański’, ‘Makar’, ‘Gol’, ‘Luna’, ‘Mentor’ and ‘Cisko’) were analysed in terms of their content of sterols, using GC/MS. Campesterol, stigmasterol and β-sitosterol were identified among this group of compounds. Statistical analysis showed that the amount of these compounds varies markedly depending on the celeriac variety. The largest amount of total sterols was found in the ‘Jabłkowy’ variety (198.30 mg kg-1 of fresh material) and the ‘Gol’ variety (190.43 mg kg-1 of fresh material). The content of stigmasterol was measured to be 99.68 mg kg-1 of fresh material in ‘Jabłkowy’ and 103.80 mg kg-1 of fresh material in ‘Gol’. The amount of β-sitosterol in these varieties was 79.07 mg kg-1 and 65.81 mg kg-1 of fresh material, respectively. The content of campesterol, on the other hand, was measured to be 19.55 and 20.83 mg kg-1 of fresh material, respectively. Plant oils which contain from 100 to 500 mg of sterols per 100 g are considered to be the best source of those compounds. ‘Jabłkowy’ and ‘Gol’ celeriac varieties contain much less sterols (approximately 20 mg per 100 g of fresh material) than plant oils. However, they are considered to be fairly good sources of sterols because of higher rate of consumption than oils.

Zawartość steroli w selerze korzeniowym

Przy pomocy metody GC/MS analizowano materiał roślinny 7 odmian selera korzeniowego: ‘Jabłkowy’, ‘Odrzański’, ‘Makar’, ‘Gol’, ‘Luna’, ‘Mentor’ i ‘Cisko’ pod kątem zawar-tości steroli. Wśród tej grupy związków zidentyfikowano kampesterol, stigmasterol i β-sitosterol. Analiza statystyczna wykazała istotne różnice w zawartości tych związków w zależności od odmiany selera. Największą zawartość steroli ogółem posiadały selery odmian ‘Jabłkowy’ i ‘Gol’, odpowiednio 198,30 oraz 190,43 mgkg-1 świeżego surowca. Stigmasterol występował w największej ilości, odpowiednio 99,68 oraz 103,80 mgkg-1 świeżego surowca, β-sitosterol w ilości odpowiednio 79,07 oraz 65,81 mgkg-1 świeżego surowca, a kampesterol w ilości odpowiednio 19,55 oraz 20,83 mgkg-1 świeżego surowca. Oleje roślinne, zawierające w 100g od 100 do 500mg steroli, uważane są za najlepsze źródło tych związków. Selery odmian ‘Jabłkowy’ i ‘Gol’, zawierające znacznie mniejsze ilości steroli (około 20 mg w 100 g świeżego surowca), wydają się być pomimo to ich dobrym źródłem ze względu na możliwość wyższego spożycia tych warzyw w stosunku do olejów roślinnych.
